For example, our Beet & Apple soup is loaded with beetroots—a superfood known for its high fiber, folate, manganese, potassium, iron, and vitamin C content. These nutrients are essential for improved blood flow, lower blood pressure, and increased exercise performance. By integrating hundreds of pounds of freshly prepared beets into each batch, we ensure that every spoonful supports not just your taste buds but your body's health needs. As a bonus, I am also including a quick and easy Beet & Apple risotto recipe. 


Beet & Apple Risotto Recipe

  • 1 large sized beetroot
  • 2½ tbsp extra virgin olive oil
  • salt, more to taste
  • 1 small shallot finely diced
  • 1 cup arborio rice
  • 2 cup 18 Chestnuts Beet & Apple Soup
  • 1 tbsp balsamic vinegar

Step by Step Instructions

  1. Heat up the oven to 390° F
  2. Coat beetroot with olive oil. Bake for about 25 minutes until tender. Remove from the oven and allow it to cool completely (very important). Peal and cube it into tiny cubes.
  3. Heat up 2 tbsp of olive oil in a heavy bottomed pan or pot, one that you have a fitted lid for.
  4. Add in chopped shallots and sauté on a low heat until translucent (about 5 minutes), stirring from time to time.
  5. While the shallots are sauteing, mix in rice and allow it to coat for a few seconds, stirring frequently.
  6. Next add in 1 cups of beet & apple soup, salt. Allow the liquid to cook off completely before adding more.
  7. Keep on adding the beet & apple soup, in small amounts, until fully absorbed by the rice before adding the next portion. Make sure to stir the rice often to activate the starch, which makes for a creamy risotto. 
  8. Once all of the beet & apple soup has been used, continue to add water to the rice until the rice is almost al dente – i.e. has a small amount of bite to it when tasted. It will take about 15-20 minutes from the moment you first started adding liquid to the pan.
  9. Add cubed beets to the cooked risotto.
  10. Taste a grain of rice to make sure it is almost ready. If it is, switch the heat off, cover the pan /pot and allow the risotto to rest for 5 minutes.
  11. Top with balsamic vinegar.
