Chestnut Pound Cake

Ingredients

  • 2 sticks butter, room temperature
  • 1 ½ cups sugar
  • 2 eggs
  • 3 cups cake flour, or gluten free flour
  • 1 tbsp baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • ½ teaspoon nutmeg
  • ¼ teaspoon cardamom
  • 1 cup Chestnut Maple soup
  • 3 tbsp maple sugar, for topping


Directions

  1. Preheat oven to 350°F.
  2. Spray a loaf pan with nonstick spray and line it with parchment paper.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, nutmeg, cardamom, and salt.
  4. With an electric stand mixer, beat butter and sugar until light and fluffy.
  5. Add eggs one at a time, until fully incorporated about 2 minutes.
  6. With the mixer on low speed, add the flour mixture in three additions alternately with Chestnut Maple soup in two, beginning and ending with flour.
  7. Mix just until moistened.
  8. Pour mixture into the loaf pan and top with maple sugar.
  9. Bake for 1 hour -1 hour 15 minutes, or until a toothpick pulls clean from the center.
  10. Let cool for 30 minutes, slice, and enjoy!
